Cook @rice noodles{6%oz}(about a 6–6.3 oz package; lo mein or fettuccine also work if you skip rinsing) in boiling water according to package directions until tender, about ~{5-6%minutes}. Reserve @pasta water{2%tbsp}, then drain, rinse, and toss in a #large bowl{} with @sesame oil{1%tbsp}. Set aside.

In a #saucepan{} over medium-low heat, whisk @creamy peanut butter{1/3%cup}, @soy sauce{3%tbsp}, @lime juice{2%tbsp}(fresh), @brown sugar{2%tbsp}, remaining @sesame oil{1%tbsp}, and @chili paste{1%tsp} until smooth, about ~{2%minutes}.

Whisk in the reserved warm pasta water (or @coconut milk{2%tbsp} for a creamier sauce) to thin slightly; remove from heat.

Add the noodles and toss until completely coated. Top with @roasted peanuts{2%tbsp}(unsalted, chopped), @scallions{2%tbsp}(sliced), and @fresh cilantro{}(chopped). Serve immediately.
